Nicky’s Shrimp Scampi
2 pounds peeled and deveined shrimp
6-8 cloves garlic, roughly chopped
1 stick butter
Juice of ½ lemon, squeezed fresh
1 large bunch of parsley, chopped
Salt, Pepper, and Cayenne Pepper to Taste
Melt butter in a large saucepan over medium high heat. Add garlic and cook for two minutes. Add shrimp and cook for two minutes. Turn shrimp and add lemon juice over shrimp. Cook for three additional minutes. Take off of heat. Add parsley, salt, pepper, and cayenne pepper to taste. Serve warm over rice or noodles. Serves 4.
